Meet the Chef

John Gettelfinger

A solid guy with bristly short hair who looks like he gets his own way a lot, so it's kind of endearing that he answers to the name "Peach" and says his all-time favorite meal is his grandmother's chicken and dumplings.

Peach's thinking about food begins with the idea that "you take what you've got and let it stand on its own." He doesn't believe in adding excessive ingredients to a plate so that the essential nature of the food is lost. Increasingly he is grounding his own cooking style in traditional ethnic cuisines like Italian and Asian, and he is gaining a new appreciation for Southern cooking, a necessity when he moved back to Southern Indiana.

For him, the excitement of cooking comes in the creative process, when you have imagined a dish and get that it is working — when you see it or taste it and know that you are on the right track. It all comes together when he walks through the dining room and people he doesn't know grab him and tell him the food is great.
